What better way to enjoy the beauty of Cheyenne than a delicious homecooked meal? Cowboys used to fill up with this hearty chili while they were out on the range. Today, you can enjoy a taste of cowboy life!

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon cumin powder
  • 1 teaspoon oregano
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces tomato sauce
  • 1 14.5-ounce can diced tomatoes
  • 1 14.5-ounce can black beans, drained and rinsed
  • 1 14.5-ounce can red kidney beans, drained and rinsed
  • 3/4 cup beef broth
  • Optional toppings: sour cream, chopped onions, grated cheese

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add onion and garlic and sauté until softened, about 5 minutes.
  2. Add ground beef and cook until no longer pink, about 5 minutes.
  3. Add garlic powder, cumin, oregano, smoked paprika, cayenne, salt, and pepper. Stir to combine.
  4. Add tomato sauce, diced tomatoes, black beans, red kidney beans, and beef broth. Stir to combine and bring the mixture to a simmer.
  5. Reduce heat and let the chili simmer for 25 minutes, stirring occasionally. Taste and adjust seasoning if needed.
  6. Serve with optional toppings.
